Mushroom Kale Balsamic Quinoa 1-2 Cups Cooked Quinoa (follow the box, its as easy as mac &cheese!!) 1 TBS Light Olive Oil 1/2 White Onion Chopped 1/2 Cup Sliced Tomatoes 1/2 Cup Sliced Peppers 6-8 Large Mushrooms Chopped 1 Cup Chick Peas 4-5 TBS Balsamic Vinegar 1 Garlic Clove Crushed 1 -2 Cups Chopped Kale Simply saute your onions in a light oil. Add mushrooms. Continue sautĆ©ing. Remove from heat, add red peppers / tomato slices with balsamic vinegar. Mix together with Quinoa, ChickPeas, Garlic & Kale Pieces.
