We all know that Banana's šare natures natural energy bar š but did you know a cup of pumpkin š actually has MORE šÆ refueling potassium than a banana?! š Which is why i created a special ⤠post work out dessert that features this powerful šŖ vegetable! If Pumpkin Pie and Carrot Cake had a child š This explosion š„ of taste would be it!!! šš
*I made an extra large batch, but it can easily be adjusted by cutting ingredients in half šPumpkin Protein Bars š
šø1 Cup Walnuts (For the bottom)
šø1/2 Cup Raisins šø2 Cans Organic Pumpkin šø 1 Cup Shredded Carrot šø3 Cups Whole Wheat Flour (4 Cups Oat Flour Works Too!)
šø2 Scoops Vanilla Protein Powder šø2 TBS Flax Seed
šø2 TBS Vanilla Extract šø2 Eggs (Or 4 Egg Whites)
šø1 Cup Organic Apple Sauce šø4 TBS Pumpkin Pie Spice (Combo of cinnamon, ginger, nutmeg)
šø2 TSP Baking Soda
šø2 TSP Baking Powder
šø24 Stevia Packets (Or 6 TBS Honey)
ā”Topping šø1/2 Greek Yogurt šø1/2 Low Fat Cream Cheese šø2 Stevia Packets
šøLemon Zest šøTouch Of Skimmed Milk ā”In a food processor combine walnuts + raisins and spread along the bottom of your silicone pan, Thus creating a chewy, nutty bottom. ā”In a larger bowl combine your dry ingredients + wet ingredients and pour into silicone pan. ā”Bake at 365 for 25-30 minutes š„ (Use a tooth pick to ensure baked thoroughly)
ā”Let it cool before icing!
