Cauliflower rice is a definite favourite of mine. Its easy, versatile and saves me a few 100 calories a week šš»š
Small changes = BIG RESULTS.
My version of š Chinese fried "rice"
INGREDIENTS:
1 Cauliflower Chopped Into Smaller Pieces
1 Garlic Crushed
3 TBS Fresh Ginger
1/2 Cup White Onion
1/2 Cup Peas
1 Large Carrot Sliced Thin
1 Red Pepper Chopped
2 Chicken Breast Chopped
Green Onion Sliced *Garnish
1-2 TBS Light Olive Oil
Low Sodium Soya Sauce
Salt & Pepper To Taste
2 TBS Sriracha For Xtra Flavour
DIRECTIONS:
In food processor or high power blender, pulse cauliflower to rice.
In a non stick skillet dry fry the cauliflower rice to bring out the natural caramelized flavour.
Remove from pan, add light olive oil. onions, garlic & ginger. Cook until translucent. Add chicken pieces, low sodium soya sauce, salt & pepper to taste. Cook on low heat.
Add vegetable closer to end (keeping them raw and full of nutrients)
Add cauliflower rice back to the pan.
2 TBS Sriracha and combine all the flavours
Garnish with green onion.
