Whats On The Menu?😍😊📝

Grain Free Quiche Made With Caramelized Onions And Mushrooms 😙👌🏻 SUPPLIES: 1/2 Large Sweet Potato Cleaned & Sliced Thin (Or Potato Sliced Thin) 1 TBS Light Avocado Oil 1/2 Red Onion Chopped 1/2 TSP Brown Sugar 1 Garlic Crushed (Sweet and Garlicky lol mmm) 1 1/2 Cup Mushroom Chopped 1-2 TBS Balsamic Vinegar 6 Large Eggs Whisked Green Onion Chopped To Taste, + Left Over Zucchini & Red Pepper Slices For Decoration. DIRECTIONS: Preheat oven to 425. Slice sweet potato thin using sharp knife/food processor or mandolin slicer. Layer bottom of pie pan with slices. Sprinkle with desired spice -- I used 1 TBS Mrs.Dash mixed with chipotle spice Bake at 425 for 30 min MEANWHILE: In a pan, heat oil & sautee onions, garlic, add a sprinkle of sugar(do not oven sweeten here folks, it will through your flavouring off) mushrooms and balsamic vinegar. Let flavours combine. Remove from heat. So once the sweet potato is half baked, pour the onion mixture into the pie pan. Pour in whisked eggs Top with green onion, I like to add whatever left over vegetables for decorating. Zucchini & red pepper in this case. Turn down the heat and BAKE @ 365 for 30 minutes or until no liquid is present in the middle.
