Brought a little taste of Mexico š to our house this weekend by making Enchiladas ššš Mucho Easy!⨠I can't believe In the past I've paid 34 dollars šø to some restaurant when my Enchiladas were half the priceš and twice as nice š
Dancing što gypsy kings while cooking this dish was a MUST!!! š āØEatClean Enchilada SauceāØ
ā¤1TBS Avocado Oil ā¤1 1/2 Cups Organic Tomato Sauce
ā¤3/4 Cup Vegetable Broth
ā¤1/2 Cup Cleaned Zucchini ā¤3 Garlic Cloves, Minced ā¤2 TBS Red Chilli Pepper ā¤1/2 TSP Hot Paprika
ā¤1/2 TSP Cumin ā¤Black Pepper + Salt To Taste ā”In a pot, add your avocado oil and sautĆ© your garlic. ā”Add the red chilis pepper, paprika, cumin, vegetable broth, tomato sauce, zucchini + pepper and salt Bring to a boil. ā”Reduce the heat to low and simmer for 5-10 minutes. ā”Using your hand held blender, blend in all the zucchini pieces so it becomes a creamy sauce. ā”Set aside until ready to use.
āØEnchilada IngredientsāØ
ā¤1 TBS Avocado Oil ā¤1 Small Yellow Onion, Chopped ā¤4 Garlic Cloves, Minced ā¤1 Package Of Ground Turkey, Extra Lean (Approx 400Grams) ā¤1 Cup Beans (I used red)
ā¤1 1/2 Cup Diced Tomatoes ā¤4 TBS Canned Hot Peppers, Diced
ā¤1/2 Cup Fresh Cilantro, Chopped
ā¤2 TSP Cumin ā¤1 TSP Chili Powder ā¤Salt And Pepper To Taste
ā¤8 Low Carb Tortillas ā¤1/2 Cup Low Fat Shredded Cheese.
ā”In a large skillet, combine avocado oil, onion and garlic. saute ingredients together.
Add your lean turkey, and brown. ā”Add your hot peppers, black beans, cilantro, diced tomatoes, cumin powder and chili powder. + salt and pepper. Mix well and simmer on low. Don't over cook! ā”In a baking dish, roll each tortilla with the turkey mixture. Placing in the baking dish with the seam side down. ā”Top with your homemade enchilada sauce and cheese. ā”Cover with foil and bake at 400 degrees for 20-25 minutes.š„
