Light Chana Masala

Chana Masala😍 I decided to adapt this Indian chick pea curry recipe for a heartier version with more vegetables & less oils 🍅🍠🌽🍆❤️Garam Masla, the main spice in this sauce is actually made up of 32 other spices and they do a variety of things for the body like detoxify🌾 relieve pain and inflammation, help gastric problems like heart burn and upset stomachs, reduce bloating, even help battle bad breath!😷 For more information on this spice check out my fb page: Link In Bio💭 INGREDIENTS: 2 TBS Coconut Oil 1 Onion Chopped (I used 1/2 red & 1/2 white for more flavor) 4 Tomatoes Chopped 4 Cloves Of Garlic Crushed 3 TBS Ginger Shredded 1 TSP Red Chili Pepper *Or According To Taste 4 Bay Leaves 3 TBS Garam Masala Powder 1 TBS Coriander Powder 1 TBS Turmeric Powder Salt & Pepper To taste 1/2 Cup Water (Or more depending how thick you like your sauce) 1 Cup Chick Peas 1 Red Pepper Chopped 1 Cup Chopped Brown Mushroom (Interesting depth to this sauce) 1 Cup Cooked & Roasted Cauliflower* 1/2 Cup Cooked & Roasted Potato. *I roasted these vegetables to bring out different flavors but its not mandatory. 1/3 Cup Corn 1/3 Zucchini Sliced *Get creative, use whatever vegetables you have left over. DIRECTIONS: Grind onions, tomato, ginger, garlic, and chili pepper together in a food processor until combined. Heat olive oil in large non stick pan on medium heat. Fry bay leaves until fragrant (about 30 seconds) Pour onion paste into frying pan and fry until golden brown. (about 2-3 minutes) Season the mixture (cook another 2-3 min) Add water to the mixture, bring in chick peas and vegetables to the gravy and reduce heat. Simmer for 30 min on low.
