Raw Asparagus Noodles

Asparagus is one of the worlds healthiest foods ๐ containing a variety of vitamins ๐ป and minerals ๐ at 27 calories per cup ๐๐ with 2 grams of protein ๐ช you can't really go wrong! ๐ By preparing Asparagus raw we keep all the important nutrients ๐๐
Take advantage of asparagus season ๐๐๐ try it yourself; ๐ Raw Asparagus Noodles ๐
๐ป1 Bunch Asparagus (washed and tough part removed)
๐ป 1/2 Cup Alfalfa ๐ป3 TBS Freshly Squeeze Lemon
๐ป 1 TBS Avocado Oil
๐ป 1/4 Tsp Salt
๐ป 3 TBS Romano Cheese (use Himalayan salt if your vegan ๐)
๐ป 1 Garlic Clove Minced ๐ป1 Tbs Pine Nuts ๐ป Fresh Ground Pepper To Taste ๐ป Shredded Carrot For Garnish โกUsing a potato peeling shave the asparagus, turning and shaving as much as you can, reserve the little end pieces for another use.
โกPlace in a bowl with avocado oil, garlic, lemon juice and salt. Cover and refrigerate for a few hours, that way the lemon juice will tenderize the asparagus โกRemove from fridge mixing in Alfalfa, Romano cheese (Or not), Pepper and Pine Nuts. *You can even shred carrot into the salad or on top for garnish!
