Take advantage of asparagus season ๐Ÿ˜›๐Ÿ˜›๐Ÿ˜› try it yourself; ๐Ÿ’š Raw Asparagus Noodles ๐Ÿ’š

๐Ÿ”ป1 Bunch Asparagus (washed and tough part removed)

๐Ÿ”ป 1/2 Cup Alfalfa ๐Ÿ”ป3 TBS Freshly Squeeze Lemon

๐Ÿ”ป 1 TBS Avocado Oil

๐Ÿ”ป 1/4 Tsp Salt

๐Ÿ”ป 3 TBS Romano Cheese (use Himalayan salt if your vegan ๐Ÿ˜Š)

๐Ÿ”ป 1 Garlic Clove Minced ๐Ÿ”ป1 Tbs Pine Nuts ๐Ÿ”ป Fresh Ground Pepper To Taste ๐Ÿ”ป Shredded Carrot For Garnish โžกUsing a potato peeling shave the asparagus, turning and shaving as much as you can, reserve the little end pieces for another use.

โžกPlace in a bowl with avocado oil, garlic, lemon juice and salt. Cover and refrigerate for a few hours, that way the lemon juice will tenderize the asparagus โžกRemove from fridge mixing in Alfalfa, Romano cheese (Or not), Pepper and Pine Nuts. *You can even shred carrot into the salad or on top for garnish!
