❤An absolute favorite growing up was Plnená Paprika, which translates directly into 📚 Stuffed peppers 😍😍😍 Ive adapted this recipe removing the unhealthy animal fats 🐷 + sour cream and swapping rice for quinoa -- Even your Bupka (Grandma) will approve 😉
🔹3 Large Peppers 👌👌👌
🔹1 LB Organic Lean Turkey Meat
🔹1 TBS Hot Hungarian Paprika❤ 🔹2 Garlic Clove Chopped 🔹1/4 Onion Minced
🔹1 TBSP Chopped Fresh Parsley 🔹1 TSP Cumin Powder
🔹1 Cup Natural Chicken Broth (I like to pre-make mine & freeze it for convenience 😄)
🔹1/4 Cup Tomato Sauce 🔹1 1/2 Cups Cooked Quinoa 🍚
🔹Salt & Pepper To Taste
🔹1 TBS Avocado Oil 🔹1 TBS Plain Greek Yogurt For Garnish (Optional) 👑
➡On a saute pan heat up your avocado oil adding onion, garlic & parsley to the pan 👀
➡Saute for about 2 minutes adding ground turkey, season with salt & pepper, paprika + cumin powder 😛
➡Brown for several minutes until completely cooked through. Adding 1/4 cup of tomato sauce 🍅 and 1/2 cup of chicken broth. Mix well and simmer on low for about 5 minutes ➡Combine the cooked quinoa and meat together ➡Removing all the seeds from the peppers, Spoon the meat mixture equally into each pepper 🍴
➡Place the stuffed peppers on the baking dish and pour the remainder of the chicken broth on the bottom of the pan 😋
➡Cover tight with aluminum foil and bake for about 35 minutes at 400 degrees 🔥
🌟Top with Plain Greek Yogurt as a guilt-free old country delight!🌟
