Healthy Groentesoep Meat Ball Soup

Lots of requests for this recipešæTraditionally this Dutch soup, known as Groentesoep is made from a clear broth and is served with vermicelli and meat balls (met balletjes) ...I feel like most of Europe shares recipesš because even in Slovakia we have a similar version using Beef broth and liver dumplingsš So here is my slim down version of this fragrantly delicious soupš Its perfect as a complete meal or on the side with lunch. Broth: 1 TBS Light Olive Oil 2 Onions Into Chunks 2 Carrots 3 Stalks Of Celery 3 Cloves Of Garlic (Optional) 3 Bay Leaves 1 TBS Pepper Corns 4 Springs Parsley 1 Spring Thyme 1/2 TSP Salt 1 Liter Cold Water --Clean the vegetables for the broth, cut into large chunks. Place in a large cooking pot, add oil & onions. Cook for 2 minutes, then add other broth ingredients, and pour over 1 liter cold water Bring slowly to a boil and simmer for 1 hour. Sieve the broth. Meat Balls: 500 Grams Of Lean Chicken (Or Lamb) 6 TBS Dried Breadcrumbs 1 Garlic Crushed Salt & Pepper To Taste 1 TBS Worcestershire sauce OR Horseradish sauce 1/4 TSP Marjoram --Make the meatballs by mixing all the ingredients and rolling into balls. Vegetables For The Soup: *You can use any vegetables you please! 3 Chopped Carrots 4 Stalks Of Celery Chopped 1 Leek Chopped 3 Sprigs Of Fresh Parsley Chopped (Add this last) Salt To Taste. After bringing the broth to a simmer, add the meatballs and vegetables. Stir once, very carefully, to prevent breaking the meatballs. Cook with the lid partly on the pot until the meatballs start floating (this means they are cooked).
